Sausage Mac Casserole
2 cups macaroni, cooked & drained
1 teaspoon chopped garlic
1 lb of sausage, uncased or chopped and browned, drain any grease
16 ounce jar of spaghetti sauce
1 small can of sliced mushrooms, drained
16 ounces of shredded mozzarella cheese
1/2 cup Romano cheese, grated
In a 5 quart saute pan, brown the sausage meat and garlic. If you use chicken sausage, add a 1/4 cup of oil. Once the sausage meat is cooked, add the spaghetti sauce, mushrooms and Mozzarella. It can either be layered, or just stirred together. Top with a layer of the Romano cheese and bake at 350 degrees for about 30 minutes, until the cheese is slightly browned and the casserole is bubbling.

Pineapple Upside-down Cup Cakes or Cakes
1 Duncan Hines pineapple supreme cake mix
Oil, and eggs called for on cake mix box
1 20 oz can of pineapple slices, save juice
1/2 cup of brown sugar
1/4 cup of melted butter
Jar of Marachino cherries
Pre heat oven to 350 degrees.
Mix the cake as directed on box, substitute the water with the pineapple juice from the canned pineapple.
Goat Cheese Scalloped Potatoes
6 baking potatoes, peeled and sliced horizontally with a mandolin or food processer
1 yellow onion sliced into circles and separated
3 T flour
¼ cup butter
2 ½ cups cream
3 cloves garlic sliced into thin pieces
2 ounces crumbled goat cheese
Salt and pepper
Heat oven 350 degrees - In Dutch oven arrange potatoes and onions in 4 layers; sprinkling each of the first three layers with flour, goat cheese, salt, garlic, pepper and butter. Dot top layer with butter. Heat cream to scalding (do not boil) and pour over the potatoes. Cover and bake 30 minutes; uncover and bake 60 minutes more. Let stand 5-10 minutes before serving.
Peel potatoes and make and bake casserole immediately or the potatoes will turn brown.

Pot Roast / Beef Stew
Layer the following ingredients in a Golden Rabbit Lasagna Pan
2 lbs Beef Stew Meat (either whole for pot roast or cubed for beef stew)
2 lbs Stew Vegetables
1 tsp Salt
1 Tbl Sugar
2 Tbls (or a little more) Tapioca
2 (5.5 oz) cans V-8 Juice
Arrange meat first in the Lasagna Pan. Put vegetables on top of meat. Sprinkle the Dry ingredients on top. Pour V-8 juice over all the ingredients.
